Ingredients 8 oz cooked lobster 1 cup red pepper ¼ cup chopped green onion ½ cup sliced mushrooms 6 tbsp. fat-free mayonnaise 1 tsp. oregano 1 tsp. garlic 1 tsp. black pepper 2 regular whole wheat pitas 4 oz shredded mozzarella cheese | ||
| Preheat broiler. Combine lobster, red pepper, green onion, mushrooms, mayonnaise, oregano, garlic, and black pepper in a bowl. Divide whole wheat pitas into four pieces. Spread lobster mix on top of pitas. Sprinkle with mozzarella cheese. Broil for five minutes. Serves four. One serving equals ½ protein, ½ vegetable, 1 starch, 1 dairy, ¾ ree exchange. | ||
