Photos are not exact representations of the prepared recipe. 8 oz lean beef 2 cups tomato, diced 1 cup celery, chopped ½ cup green onion, chopped 1 cup green pepper, chopped 2 garlic cloves, minced black pepper cayenne pepper 3 cups spinach leaves 8 oz 1% cottage cheese 10 oz tofu (medium-firm) 2 oz mozzarella, grated | ||
| Preheat oven to at 400°. Brown beef. Add tomato, celery, onion, and green pepper. Season sauce to taste with garlic, pepper, and cayenne, and let simmer. Wash spinach. Layer sauce, spinach, cottage cheese, and tofu. Top with cheese and bake for 1 hour. Variation: Omit tofu and use an additional 8 oz of ground beef. Serves four. One serving equals 1 protein, 2 vegetables, 1 dairy. | ||
